Pain de Mie bead is baked inside of an enclosed metal box, a Pullman pan (mine is 4x4x16 in./10x10x41cm), and the result is a more dense bread with little crust. It is the bread of choice for sandwiches in France. It also makes great French toast (top with strawberries and whipped cream—yum!) and croûtes for canapés. The name literally means "crumb bread."
